Ardtaraig source their salmon from the northern isles of the cold clear waters of Scotland and only carefully selected fish are used. A mixture of sea salt and demerara sugar is applied to cure the fillets prior to smoking.The soft pellicle remains on the product to give it a more characteristic smokey flavour. Smoked over smouldering oak and beech wood chippings in a temperature and humidity controlled kiln for 7 – 9 hours.
