Venison sausages with roasted garlic mash & red onion marmalade

Ingredients
Venison Sausages
Red Onion Marmalade:
8oz (225g) Red Onions 50ml Sunflower Oil 2 tablespoons of Clear Honey 100ml Fresh Orange Juice
Roasted Garlic Mash:
1lb (450g) Maris Piper Potatoes ½oz (15g) Dried Roasted Garlic Flakes 1oz (25g) Butter Salt & Pepper
Method
Prepare the mashed potato as normal and then fold the garlic flakes into the potato. Season and taste. You may wish to add a little extra butter, milk or cream to the potato or extra garlic flakes for a stronger flavour. This can be served with grilled or pan fried venison sausages.
