Scotland, including Ayrshire Ham, Kirkonnel Beef,
Scottish Hill Lamb, Smoked Chicken, Duck, Salami, Venison
and Beef.
Ayrshire Cured Cooked Ham - This speciality
ham is cured with a secret old-fashioned cure and cooked
on the bone with a unique recipe including brown sugar
and honey. Matured and conditioned for a minimum of two weeks,
it's a joint of prime ham delivers a deliciously mild but rich flavour.
Smoked Kirconnel Beef - Using a select cut of Angus beef, widely known for
their top quality meat, this very special boneless joint is prepared and
conditioned in a light, natural cure. It is then cold smoked over oak
chips to produce a subtle flavour and unique texture. Designed to be
eaten cold as charcuterie meat, you'll find it delicious either thinly
sliced as a starter, or served in small cubes in a salad with warmed olive
oil and balsamic vinegar dressing.
Scottish Hill Lamb - Selected from lambs reared in upland pastures of Scottish
hills, this unique lamb is cured and cooked on the bone using a mild recipe.
It is then cold smoked again on the bone over oak chips to deliver a subtle and
delicious flavour.
